Meet the Chef
Executive Head Chef, Julian Nielson, has been with the Ommaroo since 2015. Having trained at the Royal Kitchen at Buckingham Palace and worked for the Royal family for three years, he is passionate about creating beautifully presented, innovative dishes with the finest seasonal produce.
Born and raised in Wimbledon, Julian’s love of food and cooking began in the family home. Inspired by his Grandmother and the mother of a close school friend, both of whom cooked excellent food, Julian began his formal training at Brooklands College in Weybridge and Westminster College in Battersea. He was offered an apprenticeship in the Royal Kitchen at Buckingham Palace when he was just 17.
Julian worked for the Royals for three years, from 1989-1992, where he honed his presentation skills and the use of seasonal produce, which the family were passionate about.
Julian moved to Jersey in 1992, shortly after the fire at Windsor Castle. He visited the Island often as a child, and his relocation led him to his wife, Tracy. He joined the Ommaroo in 2015, where his passion for crafting food fit for the Royals has elevated the Hotel’s menus to new heights.
Julian is passionate about using local, seasonal produce and thrives on the challenge of developing dishes that reflect the seasons.
